bill, may wish update knowledge in roaming profiles.

in windows server 2008, roaming user profiles store recycle bin file @ root of users profile. if user has redirected user profile, note hidden file/folder stored @ root of directory on remote server. however, if users empty recycle bin, do. data lost.

you might however, able lucky file recovery software installed on server itself. data isn't gone, marked delete bit. rest of data still there long not overwritten. hard disk not overwrite file until restarts cycle of writting when physical disk full @ end of disk. record player... should have fair amount of time recover data in space.
