is method work?
yes method work, need use right tools.

use xcopy, robocopy or richcopy microsoft (xcopy , robocopy comes 2008 now).  all will copy permissions.  in general

robocopy /b /nosd /nodd /e /v /ts /fp /copyall /mir /pf /w:10 /r:3 /xf s:\source d:\destination

alternative can use xcopy copy security.
appropriate switches here
xcopy s:\source d:\destination /s /e /x /c /q /h /k /i /r /y

to copy shares use rmtshare, display current config, run again create same config on new file server.  older utility microsoft need find , download.

i little concerned, changing name off new fileserver, inflict share have copied old server?
straight forward, nothing worry about.  once data copied over, turn off or rename orginial server, rename new server old server name, , reboot.

optionaly, can use optionalnames setting in lanmanserver.  see link instructions
